When Starbucks rolled out their pumpkin spice sweet cream cold brew, I figured I try it. I like my coffee sweet, but not too sweet. To my surprise, it was quite refreshing, actually. The sweet cream mostly stays on top of the coffee, so as you sip, you get a tiny taste of the decadent smooth cream before it perfectly mixes with the small sip of coffee, sliding in harmony right before it passes your lips— Quite dramatic right? Well, I enjoyed it.
When it comes to sugars, my demise would have to be coffee. How? Well, if you have read my latte recipes, they’re usually not the “unadulterated, adult way” of drinking coffee. So, trying to stay on a sustainable low sugar diet is HARD because I do need my coffee slightly sweet.
I’ve been experimenting ways to create low-sugar recipes, and well, since it’s fall, why not make a sugar-free Starbucks copycat?
To my credit, this isn’t exactly a Starbucks copycat. Infact, I don’t even know what’s in their recipe.
Here’s my recipe for the Pumpkin Spice Sweet Cream Cold Brew – keto friendly! For the sweet lovers out there, the only change you have to make is to switch the sugar-free vanilla syrup to regular vanilla syrup. Enjoy!
Ingredients
Heavy cream: Heavy cream is my main ingredient for most of my keto creamers. Unsweetened, of course, but for some reason when it is whipped, my taste buds tricks me and it gives off a slight sweet taste. Plus, it thickens and foams nicely.
Pumpkin puree: Unsweetened. Use pumpkin puree insead of pumpkin pie mix if you want it keto-friendly. The mix usually has sugar in it already.
Apple Pie Spice: I prefer to use apple pie spice rather than the pumpkin pie spice. With the pumpkin puree, I don’t want it to taste TOO pumpkin-y. The hint of the “apple pie” acidity compliments the thick pumpkin puree.
Sugar Free Vanilla Syrup: I like to use the sugar free vanilla syrup instead of vanilla extract. The vanilla extract is too strong, and it doesn’t sweeten the cream to the taste I am expecting. Of course, you can use regular vanilla syrup if you don’t like the sugar-free taste.
Favorite cold brew: This recipe can actually go with any coffee – cold brew, espresso, hot, DECAF.
